May Meeting and Festive Luncheon Requires Your Choice
Luncheon features your choice among four entrées
Please be sure to indicate your menu selection when you send in your reservations. (Prepaid members should contact volunteer reservationist Judy Leahy Grimes with their entrée choices and to confirm their reservations.)
Come mingle with friends and colleagues in the Campus Club Bar & Lounge. Coffee is available at 10:30 a.m.; the Wine and Beer cash bar opens at 11 a.m.; at 11:45 we will move to ABC for Lunch.
Program will follow a brief business meeting and the election of officers and board members for 2017–18.
All meals are served with fresh-baked bread and seasonal vegetables. Please select one entrée from the following:
1. Trout Fillet, Brown Butter and Almonds: Oven- roasted trout drizzled with Hope Creamery brown butter, lemon, and toasted almonds
2. Ricotta-Stuffed Chicken: Boneless skinless chicken breast stuffed with bacon and ricotta, pan seared and served with demi-glace
3. Rainbow Chard and Wild Rice Dolmades: Minnesota wild rice mixed with roasted vegetables and herbs, rolled in chard leaves. Served with dried fruit compote. (Gluten-free, dairy-free, vegan option)
4. Beef Ribeye Steak: Grilled to medium rare and sauced with red wine demi-glace. Served with skin-on garlic mashed potatoes
Finale for all: assorted organic cookies, fresh brewed coffee, and water will be served.
